  • ½lemon
  • ¼ cupplain Greek yogurt
  • 2pork chops, boneless
  • ¼ cupraisins
  • ¼ cupwalnuts
  • lemons

Directions

  1. Preheat the oven to 350°F.
  2. Place the pork chops in a small baking dish and rub both sides with paprika, salt, and pepper.
  3. Bake the pork chops until they are cooked through, about 15–20 minutes.
  4. In a medium bowl, whisk together lemon juice, yogurt, honey, salt, and pepper to make the dressing.
  5. Wash and dry the apples and celery; core the apples and cut them into medium dice, then dice the celery.
  6. Add the apples and celery to the dressing and toss to coat.
  7. Stir in the raisins and roughly chopped walnuts, then toss the salad to combine.
  8. Cut the remaining lemon into wedges for serving, then plate the pork chops with the salad and lemon wedges.

Two tips

  • Make the dressing ahead and refrigerate for up to a day.
  • If honey isn’t on hand, a small drizzle of maple syrup from the pantry works as a substitute.
