  • 1 lbBrussels sprouts
  • 2 clovesgarlic
  • ¾ lbribeye steak
  • 1shallot

Directions

  1. Rinse the Brussels sprouts, trim the rough ends, and halve them lengthwise. Place them in a bowl and set aside.
  2. Heat a skillet over medium-high heat.
  3. Season the ribeye generously with salt and pepper.
  4. Coat the bottom of the skillet with oil, then add the steak and sear until your desired doneness, about 2–5 minutes per side. Transfer to a plate and loosely cover with foil; let rest.
  5. Peel and thinly slice the shallot; peel and mince the garlic.
  6. In the same skillet, melt butter and add the Brussels sprouts, shallot, and garlic. Cook, stirring occasionally, until the sprouts brown, about 4–5 minutes.
  7. Pour in 1/2 cup water and bring to a simmer. Cook until the sprouts are tender and the liquid evaporates, about 4–5 minutes.
  8. Drizzle with balsamic vinegar and season with salt and pepper. Cook, stirring occasionally, for another 1–2 minutes.
  9. Slice and serve the steak with the Brussels sprouts on the plate, using the pan juices as needed.

Two tips

  • Prep ahead by trimming sprouts and mincing garlic; refrigerate with the shallot until ready to cook.
  • If balsamic isn’t available, a splash of red wine vinegar works as a quick substitute.
