  • ¾ lbribeye steak
  • ¾ lbsweet potato

Directions

  1. Wash and dry all produce, then prep each item.
  2. Peel and dice the sweet potatoes into approximately 1-inch cubes and place them in a small saucepan.
  3. Add enough water to cover the potatoes and bring to a boil; simmer until tender when pierced, about 8–10 minutes.
  4. Trim the ends of the green beans and place them in a medium bowl.
  5. Trim and mince or press the garlic after peeling.
  6. Preheat a skillet over medium-high heat while you finish prep.
  7. Pat the steak dry, then season generously with salt and pepper on both sides.
  8. Once the skillet is hot, add the virgin coconut oil and coat the bottom; add the steak and cook, flipping every 15–30 seconds, until it reaches your preferred doneness (about 5–7 minutes for medium-rare); transfer to a plate and let rest for 5–10 minutes.
  9. In the same skillet, season the green beans with salt and pepper and cook, tossing frequently, until bright green and tender-crisp, about 3–4 minutes; remove from heat.
  10. Drain the potatoes, reserving ¼ cup of the cooking water; return the potatoes to the saucepan.
  11. Add the reserved water, minced garlic, butter, salt, and pepper to the potatoes; mash until smooth with a masher or fork.
  12. To serve, split the steak, sweet potato mash, and green beans between plates and enjoy.
