Directions

  1. Preheat the oven to 450°F and set a rack in the center. Line a baking sheet with parchment paper.
  2. Bring a medium pot of water to a boil and have it ready for the potatoes.
  3. Wash and dice the sweet potatoes, then add them to the boiling water. Cook until tender when pierced, about 8–10 minutes, then drain and return to the pot.
  4. Wash the broccoli and cut into bite-sized florets; place them on the prepared baking sheet.
  5. Peel and mince the garlic; wash the lemon and zest it.
  6. Drizzle the broccoli with olive oil and lemon juice, then season with the lemon zest, minced garlic, salt, black pepper, and red pepper if using. Toss to coat and spread in a single layer.
  7. Roast the broccoli in the oven until tender and browned, about 10–15 minutes.
  8. Meanwhile, heat a skillet over medium-high heat and season the pork chops with salt and pepper on both sides.
  9. Add oil to the skillet and swirl to coat the bottom; cook the pork chops 3–4 minutes per side until browned and cooked through. Transfer to a plate and rest for 2–3 minutes.
  10. Grate 1/8 cup Parmesan.
  11. Remove the broccoli from the oven, sprinkle with Parmesan, and toss to coat.
  12. Add butter to the mashed potatoes and season with salt and pepper; mash until smooth with a potato masher or fork.
  13. To serve, place a pork chop with a portion of sweet potato mash and a side of broccoli.

Two tips

  • Prep ahead: start the potatoes boiling early and finish while the broccoli roasts. Leftovers keep well refrigerated for a day or two.
  • Swap ideas: if you prefer extra brightness, add a squeeze of lemon juice to the mashed potatoes just before mashing.
