Ingredients

  • ½ cupdried cranberries
  • 1orange
  • ¼ cuppistachios, unsalted
  • 4 fl ozwhole milk
  • oranges

From the pantry: cinnamon, ground, oats, quick cooking, pure maple syrup, salt

Directions

  1. Juice one orange into a medium saucepan and set the juice aside.
  2. To the saucepan, add a pinch of salt and enough water; bring to a boil over high heat.
  3. Stir in the oats, dried cranberries, cinnamon, and maple syrup; reduce heat to medium-low and cover.
  4. Let the mixture simmer for 3–5 minutes, stirring occasionally, until the oats reach your preferred thickness.
  5. Roughly chop the pistachios and keep ready for topping.
  6. Divide the oatmeal into bowls, top with the pistachios and milk, and serve with the second orange on the side if desired.

Two tips

  • Prep the pistachios ahead by chopping them and storing in a small container for quick topping.
  • Serve with orange wedges on the side for a fresh citrus contrast or leftovers can be stored in the fridge for a quick reheat.
