One-Pot Creamy Taco Pasta with Turkey & Cheddar

  • ⅛ cupplain Greek yogurt
  • 6 ozrotini pasta
  • ½yellow bell pepper
  • ½ mediumyellow onion
  • yellow bell peppers

Directions

  1. Rinse and dry the produce, then finely dice half a bell pepper and the yellow onion.
  2. Heat a large pot over medium heat and add a drizzle of oil.
  3. Add the onion, bell pepper, minced garlic, and ground turkey; break up the turkey as it cooks until no pink remains and the vegetables are tender, about 5–7 minutes.
  4. Stir in the pasta, diced tomatoes, water, and spices; bring the mixture to a boil, then reduce to a simmer and cook until the pasta is tender and most of the liquid is absorbed, about 15 minutes.
  5. Meanwhile, grate the cheddar cheese and trim the cilantro, removing stems and finely chopping the leaves.
  6. When the pasta is done, remove from heat and drain excess liquid if needed. Stir in the cheddar and plain Greek yogurt along with half of the chopped cilantro until creamy.
  7. Fold in the remaining cilantro and serve the pasta in bowls, using any extra cheese for topping if desired.

  • Serving idea: brighten the bowls with a squeeze of lime and a quick extra sprinkle of cilantro, if available.
