Directions
- Wash and dry the bananas, blueberries, kiwifruit, and strawberries.
- Preheat a large skillet over medium heat.
- In a blender, combine the bananas, oats, milk, and cinnamon; blend until smooth, about 30 seconds.
- Melt butter in the hot skillet and swirl to coat the bottom.
- Pour batter using a ¼-cup measure; cook about 1–2 minutes per side until browned, cooking in batches as needed.
- While the pancakes cook, hull or slice the strawberries and peel and slice the kiwifruit for serving.
- Divide the pancakes onto plates and arrange the strawberries, kiwifruit, and blueberries alongside. Drizzle with pure maple syrup to finish.
- Serve immediately with extra fruit on the side if desired.
