  • ½ lbgreen beans
  • ½ small bunchItalian (flat-leaf) parsley
  • ½ cupKalamata olives, pitted
  • 1shallot
  • ¾ lbtilapia fillet
  • shallots

Directions

  1. Preheat the oven to 425°F and position the rack in the upper third.
  2. Wash and dry all produce, then trim the green beans.
  3. Mince the shallot and whisk it with olive oil, white wine vinegar, Dijon, and pepper to make a simple dressing.
  4. Trim the ends of the green beans and spread them in a single layer on a parchment-lined baking sheet; add the tomatoes and drizzle with half the dressing, saving the rest for later.
  5. Roast about 10 minutes, until the vegetables begin to soften.
  6. Pat the tilapia dry and season it with pepper on both sides.
  7. Roughly chop the olives.
  8. Remove the sheet from the oven and toss the vegetables; lay the fish on top and return to the oven to bake for 10 minutes, until the fish is cooked through.
  9. Strip the parsley leaves from the stems and finely chop the leaves.
  10. Turn on the broiler and cook about 4 minutes longer, until the fish is lightly golden.
  11. Transfer to plates, then top with remaining dressing, olives, parsley, and feta.

Two tips

  • Prep ahead: chop shallot and parsley and whisk the dressing up to a day in advance, refrigerate.
  • Flavor swap: if you have extra olives, add them on top when serving; you can also crumble a bit more feta over each portion for extra tang.
