Directions
- Combine the ground turkey with maple syrup and the dried herbs and spices until everything is evenly incorporated.
- Using a ¼ cup measure, shape the meat mixture into thin patties.
- Heat a nonstick skillet over medium heat and add a light coating of oil; swirl to cover the surface.
- Cook the patties on the first side until browned and cooked through, about 3–4 minutes; flip and finish cooking the other side, then transfer to a plate and loosely cover with foil.
- Return the skillet to the stove, add a bit more oil if needed, and crack the eggs directly into the pan; cook until the whites set and the yolks remain runny, about 3 minutes; season with salt and pepper.
- Toast the bread in a toaster or in the skillet if desired, ready to serve.
