Directions
- Rinse and dry the produce, then prep by zesting and squeezing the lemon into a blender.
- Drain and rinse the cannellini beans and add them to the blender along with tahini, extra virgin olive oil, and the spices.
- Season with black pepper, coriander, cumin, salt, garlic powder, and onion powder, then blend on high until the mixture is smooth and cohesive.
- If needed, loosen the dip by whisking in a little more lemon juice ready to reach your preferred consistency.
- Prepare the peppers by trimming, removing seeds, and slicing into ¾-inch longitudinal strips.
- Spoon the dip into a serving dish and arrange the pepper strips alongside for dipping.
Two tips
- Make ahead: refrigerate the dip up to a day and keep the pepper strips separate until ready to serve.
- Serving idea: swap in extra lemon juice for a lighter, brighter finish and pair with warm pita or crackers.
