Directions

  1. Whisk the flour, sugar, poppy seeds, baking powder, and salt in a medium bowl until evenly combined.
  2. In a separate bowl, melt a bit of butter over low heat, then whisk the butter with the eggs and milk until smooth.
  3. Make a well in the center of the dry ingredients, pour in the wet mixture, and whisk to form a smooth batter.
  4. Wash and dry the lemon, then zest and juice it directly into the batter, whisking gently to avoid overworking.
  5. Heat a nonstick skillet over medium-high heat and add a small amount of butter, swirled to coat the surface.
  6. Pour batter in 1/4-cup portions and cook until bubbles form on the surface and the edges look set, then flip and cook until golden on the other side.
  7. While pancakes cook, slice the strawberries if needed and keep ready to top the plates along with maple syrup.
  8. Serve the pancakes topped with more butter, the sliced strawberries, and a drizzle of maple syrup.

  • Prep the strawberries ahead: wash, trim, and slice them, then refrigerate until use.
  • Leftovers can be reheated briefly in a skillet; serve with extra strawberries and a little maple syrup.
