Directions
- Put a medium saucepan with water over high heat and bring it to a boil.
- Peel and dice potatoes and add them to the boiling water; cook until tender, about 10–12 minutes, then drain.
- Pat the steak dry and prepare a marinade by mixing minced garlic, lemon zest, lemon juice, oil, oregano, pepper, and salt; reserve ¼ of the garlic for the beans.
- Coat the steak with the marinade and set it aside.
- Rinse green beans and trim the ends.
- Heat a grill pan, outdoor grill, or skillet over medium-high heat and oil the cooking surface.
- Cook the steak 2–5 minutes per side to your preferred doneness, then transfer to a plate and loosely cover with foil to rest.
- Melt coconut oil in a sauté pan over medium heat, add remaining garlic and crushed red pepper, and cook until fragrant, 15–30 seconds; add green beans and cook 5–7 minutes, stirring occasionally, until tender-crisp; season with salt and pepper off the heat.
- Wash parsley, remove leaves from stems, mince, and stir into the mashed potatoes with broth and oil; mash until smooth and creamy.
- Season the beans lightly with additional salt and pepper and toss to coat; adjust seasoning as needed.
- To serve, place the steak alongside the mashed potatoes and green beans on each plate.
Two tips
- Prep ahead by washing and trimming the beans and parsley, and by washing and dicing the potatoes in advance.
- Leftover steak can be reheated gently with a splash of broth to keep it moist.
