Ingredients

  • ½ (18 oz) bagbroccoli florets
  • 2 stickscelery
  • 1 (1 inch) pieceginger root
  • ½ small bunchgreen onions (scallions)
  • 2pork chops, boneless
  • 5 ozsoba (buckwheat) noodles

Directions

  1. Bring a medium saucepan of hot water to a boil to cook the soba noodles, then cook them according to package directions for about 5 minutes.
  2. Wash and dry the broccoli, celery, and green onions; peel and mince the ginger, then slice the greens and celery and place them in a bowl with the minced ginger.
  3. When the water is boiling, add the soba noodles and cook until just tender; drain and rinse under cold water, then set aside.
  4. Pat the pork dry and cut it into ½-inch thick slices; add these to the bowl with the vegetables.
  5. Preheat a nonstick skillet over medium‑high heat and swirl in a small amount of toasted sesame oil to coat the bottom.
  6. Add the vegetables, pork, garlic powder, and salt to the skillet; stir-fry until the pork browns and is cooked through, about 4–5 minutes.
  7. Stir in the broccoli, hoisin sauce, and a splash of water; cover and cook until the broccoli is tender and the sauce is warmed through, 2–3 minutes more.
  8. Divide the noodles among plates, top with the stir-fry and sauce, and serve.

Two tips

  • Prep the ginger, celery, and green onions ahead and keep them together in a bowl for quick assembly.
  • Leftovers refrigerate well for 1–2 days; reheat in a skillet with a splash of water to loosen the sauce if needed.
