  • 2bananas
  • 4 sliceswhole grain bread

From the pantry: natural peanut butter, virgin coconut oil

Directions

  1. Peel the bananas and slice them crosswise into thin rounds.
  2. Preheat a nonstick skillet over medium heat.
  3. Assemble the sandwiches by spreading peanut butter on the bread, laying banana slices on one slice, and topping with the other slice to close each sandwich.
  4. When the skillet is hot, swirl in the coconut oil to coat the bottom.
  5. Place the sandwiches in the skillet and cook until the bottoms turn golden brown, about 2–4 minutes.
  6. Flip the sandwiches, add a touch more oil if needed, and cook until the other side is golden and warmed through, about 2–4 minutes more; transfer them to a cutting board.
  7. Slice each sandwich in half and place on plates to serve.
  8. Divide the sandwiches between plates and serve.

Two tips

  • Bananas can be sliced ahead of time and kept on the cutting board until you’re ready to cook.
  • If you like, dip bites in a little extra peanut butter for dipping at the table.
