Directions
- Boil a medium pot of water until it bubbles; add the green beans and cook until bright and tender-crisp, about 3–4 minutes, then drain and set aside.
- Finely grate the Parmesan, then place it in a small bowl.
- Mince the garlic and chop the basil leaves; add them to the bowl with the Parmesan.
- Trim the green beans, then prepare the pesto by adding pine nuts, oil, salt, and pepper to the bowl and mixing well.
- Coarsely grate the cheddar and set aside.
- Spread pesto on each slice of bread; layer half of the cheddar on half the slices and top with the green beans arranged in one direction. Finish with the remaining cheddar and press other bread slices on top to form sandwiches.
- Preheat a skillet over medium-low heat. Melt a little butter in the pan and cook the sandwiches, turning once, until the bread is golden and the cheese has melted, about 3–4 minutes per side.
- Meanwhile whisk together oil, vinegar, maple syrup, salt, and pepper for the salad dressing. Slice the apple and toss with mixed greens in the dressing to coat.
- To serve, slice the sandwiches diagonally and arrange with the dressed greens on plates.
- Enjoy immediately.

- Prep the pesto ahead by mincing the basil and garlic, then mixing with Parmesan and pine nuts; refrigerate until ready to assemble.
