Ingredients

  • ¼ cuppistachios, unsalted
  • 1 ½ cupsplain Greek yogurt
  • 1 (6 oz) pkgraspberries

Directions

  1. Wash and dry the raspberries, then place them in a small bowl.
  2. Add honey and a pinch of cinnamon to the raspberries, then mash with a fork or potato masher until chunky and jam-like.
  3. Roughly chop the pistachios.
  4. Divide the yogurt between two bowls.
  5. Spoon the raspberry mixture over the yogurt in each bowl.
  6. Use a spoon to swirl the raspberry into the yogurt, creating a marbled look.
  7. Sprinkle the chopped pistachios on top and serve immediately.

Two tips

  • Make-ahead idea: prepare the raspberry mixture in advance and keep it refrigerated for up to a day.
  • Serving idea: if you like extra sweetness, drizzle a bit more honey over the top; you can also swap in another small berry if desired.
