Ingredients

  • 2 (1 inch) piecesginger root
  • ½ lbgreen beans

  • ¾ lblean ground pork

Directions

  1. Preheat the oven to 425°F.
  2. Rinse and dry all fresh produce, then trim and halve the green beans while you prepare the other ingredients.
  3. Coarsely grate the cauliflower or pulse it in a food processor until it resembles rice, then spread it on a baking sheet.
  4. Thinly slice the green onions and divide half for the sheet pan and half for the sauce bowl with the ginger.
  5. Mince the ginger and sprinkle half over the cauliflower, adding the other half to the green onion bowl.
  6. Toss the cauliflower with oil and a pinch of salt, then spread it into an even layer on the sheet pan and roast for 18–20 minutes, stirring once halfway.
  7. Meanwhile, heat a nonstick skillet over high heat, then add a touch of oil and the green beans; cook until they start to brown and soften, about 4–6 minutes.
  8. Add the ground pork and a pinch of salt to the skillet; cook, breaking it up, until the pork is browned and the beans are tender, about 4–5 minutes.
  9. In the bowl with the green onion and ginger, mix soy sauce, chili-garlic sauce, sesame seeds, and maple syrup to make the stir-fry sauce; when the pork is done, lower the heat and stir the sauce into the skillet, cooking briefly until fragrant, about 30 seconds.
