Directions
- Preheat the oven to 400°F. Arrange the tortillas on a baking sheet, drizzle with oil on both sides, and season with salt.
- Bake until the tortillas are golden and crisp, about 5–7 minutes. Remove from the oven and set aside.
- Heat a nonstick skillet over medium-high heat and swirl in a little oil to coat the bottom.
- Crack the eggs into the skillet and cook until the whites are set but the yolks stay runny, about 4 minutes. Remove from heat and season with black pepper and chili powder.
- While the eggs cook, wash and small-dice the tomato; wash, halve, pit the avocados, scoop the flesh, and slice into thin half-moons.
- To serve, divide the crispy tortillas onto plates and top with the eggs, tomatoes, avocado, and feta. Drizzle with hot sauce and enjoy.
