Directions

  1. Wash and dry all fresh produce.
  2. Preheat a nonstick skillet over medium-high heat.
  3. Peel and dice the potatoes into small chunks.
  4. Add the potatoes and the ground beef to the hot skillet; cook, breaking up the meat, until browned and crumbly, about 3–4 minutes.
  5. Meanwhile, dice the carrot and onion, and mince the garlic; place them in a small bowl with the carrot.
  6. When the beef is browned, stir in the carrot and onion mixture; cook until they begin to soften, about 6–7 minutes.
  7. Trim, seed, and dice the bell peppers and set aside.
  8. Add the peppers to the skillet along with tomato sauce, raisins, soy sauce, and the spices; stir to combine, cover, and bring to a simmer.
  9. Reduce heat to medium and simmer, stirring occasionally, until the vegetables are tender and most of the liquid has absorbed, about 8–10 minutes.
  10. Remove from heat and divide among plates to serve.

  • Prep the potatoes, carrot, and onion ahead of time or on a separate day to streamline cooking.
  • Serve the skillet over cooked rice for a complete meal or with a simple side of extra peppers.
