Ingredients

  • ½ lbBrussels sprouts
  • 2pork chops, bone-in
  • ½ lbred grapes

From the pantry: balsamic vinegar, black pepper, Dijon mustard, extra virgin olive oil, pure maple syrup, salt, thyme, dried, virgin coconut oil

Directions

  1. Preheat the oven to 450°F.
  2. Wash the Brussels sprouts and grapes, trim the sprouts, halve them, and remove grapes from the stems. Spread the vegetables on a sheet pan.
  3. Drizzle with oil and season with thyme, salt, and pepper; toss to coat.
  4. Roast in the oven until browned and tender, about 20 minutes.
  5. In a medium bowl, whisk together Dijon mustard, balsamic vinegar, maple syrup, thyme, salt, and pepper.
  6. Add the pork chops to the marinade and toss to coat well.
  7. Heat a skillet over medium-high heat and coat the bottom with oil.
  8. Place the pork chops in the skillet and cook 3–5 minutes per side, depending on thickness, spooning remaining marinade over the chops during cooking.
  9. Remove the sheet pan from the oven and drizzle the Brussels sprouts and grapes with vinegar; toss to coat.
  10. To serve, place the pork chops with the roasted vegetables on plates and enjoy.

  • Make ahead: you can trim and halve the sprouts and grapes up to the day before and keep them refrigerated.
  • Serving idea: finish with a light drizzle of balsamic vinegar for extra brightness, if desired.
