Directions

  1. Rinse the basmati rice under cold water in a colander, then drain and transfer it to a small saucepan. Add water, turmeric, and salt, and bring to a boil over high heat.
  2. When the liquid boils, give the rice a quick stir, cover the pan, and turn the heat to low. Let it cook until the water is absorbed, about 15–18 minutes, then remove from heat and let it sit, still covered, for 5 minutes.
  3. While the rice rests, wash and dry the cucumber, tomato, and onions. Dice the cucumber and tomato medium, and dice the red onion and shallot finely.
  4. Toss the diced cucumber, tomato, and onions in a small bowl. Squeeze in lemon juice, drizzle with olive oil, and season with the listed spices; mix well and set aside to marinate.
  5. Preheat a skillet over medium-high heat. Pat the steak dry and season both sides with the spices.
  6. Add olive oil to the hot skillet, spread it around, and cook the steak until it reaches your preferred doneness, about 2–5 minutes per side. Transfer to a plate and rest for 5 minutes.
  7. In a separate small bowl, whisk mayonnaise with a splash of cider vinegar and a pinch of spices to form the garlic sauce.
  8. Thinly slice the steak against the grain and divide the rice, salad, and steak among plates. Serve with the garlic sauce on the side.
