Directions
- Rinse and drain the beans, then let them drain in a colander while you prep the vegetables.
- Clean and dice the yellow peppers, then coarsely chop the basil and set aside separate from the rest.
- Dice the onion and mince the garlic; add both to a bowl with the peppers, and crumble in the sun-dried tomatoes.
- Warm a medium saucepan over medium-high heat, then swirl in a little oil to coat the bottom.
- Sauté the peppers, onion, garlic, and sun-dried tomatoes, stirring often until they soften, about 4–5 minutes.
- In the same bowl used for the veg, whisk a slurry of water and cornstarch until smooth, then pour it into the pan along with almond milk and nutritional yeast; season with salt and pepper and simmer until the sauce thickens, 3–4 minutes.
- Tear or slice the remaining basil and add it along with the beans, gnocchi, and peas to the pan; cook until everything is heated through, about 4–5 minutes.
- Divide into bowls, top with the remaining basil, and serve.
Two tips
- Prep the beans ahead by draining them well so they can be stirred into the pan with the gnocchi later.
- If you don’t have almond milk, use any unsweetened plant milk you have on hand; for serving, brighten with extra pepper and a drizzle of olive oil.
