Directions

  1. Preheat the oven to 350°F and position the rack in the center. Line a sheet pan with parchment paper if you have it.
  2. Mash the peeled banana in a medium bowl until mostly smooth.
  3. Crack the egg into the bowl and drizzle in honey. Use a fork or masher to combine the mixture.
  4. Roughly chop the pecans and stir them into the banana-egg mixture.
  5. Stir in the oats, a pinch of cinnamon, and the dried cranberries until the batter comes together.
  6. Scoop ¼ cup portions of batter onto the prepared sheet pan and gently flatten each into a cookie shape.
  7. Bake for about 12 minutes, then let the cookies cool on the pan for a few minutes before transferring to plates.
  8. Serve or store leftovers in an airtight container once cooled.
