Directions
- In a small saucepan, combine salt and water, cover, and bring to a boil over high heat.
- Wash and dry the lime, then zest and juice it into a small bowl.
- When the water boils, stir in oats, cinnamon, and maple syrup; reduce the heat to medium-low and cover. Simmer 3–5 minutes until the oats reach your preferred thickness.
- In a separate bowl, whisk together plain yogurt, a bit more maple syrup, and the lime zest and juice until smooth.
- Once the oats are done, stir in the milk until creamy and warmed through.
- Divide the oats into two bowls and top with the lime yogurt and pistachios; serve right away.
