  • ¼ cuppistachios, unsalted
  • ½ cupplain Greek yogurt
  • 2 fl ozwhole milk
  • limes

Directions

  1. In a small saucepan, combine salt and water, cover, and bring to a boil over high heat.
  2. Wash and dry the lime, then zest and juice it into a small bowl.
  3. When the water boils, stir in oats, cinnamon, and maple syrup; reduce the heat to medium-low and cover. Simmer 3–5 minutes until the oats reach your preferred thickness.
  4. In a separate bowl, whisk together plain yogurt, a bit more maple syrup, and the lime zest and juice until smooth.
  5. Once the oats are done, stir in the milk until creamy and warmed through.
  6. Divide the oats into two bowls and top with the lime yogurt and pistachios; serve right away.

Two tips

  • Prep the lime zest and juice ahead for a quicker assemble during busy mornings.
  • If you have extra pistachios, sprinkle them on top or swap in chopped almonds for a different crunch.
