  • 1 cupplain Greek yogurt
  • ¼ cupwalnuts
  • bananas

Directions

  1. Preheat the oven to 400°F.
  2. In a medium bowl, combine the oats and roughly chopped almonds and walnuts.
  3. Melt the virgin coconut oil in a small saucepan, then whisk in maple syrup, salt, cocoa powder, and cinnamon until smooth.
  4. Pour the oil mixture over the oats and nuts and stir to coat evenly.
  5. Spread the mixture on a parchment-lined baking sheet and bake 6–8 minutes, stirring halfway through and watching closely to prevent burning.
  6. Peel the banana and slice it into rounds.
  7. Spoon the yogurt into bowls, then top with the warm granola and sliced banana.
  8. Serve the bowls and enjoy.

Two tips

  • Prep ahead: store the chopped nuts separately and mix with oats just before baking.
  • Swap texture by using almonds instead of walnuts, or layer extra banana slices on top for serving ideas.
