Ingredients

  • ½ (16 oz) pkgpotato gnocchi
  • ½ mediumyellow onion

Directions

  1. Heat a medium saucepan over medium heat, then add a thin layer of oil to coat the bottom.
  2. Dice the onion and mince the garlic; add both to the pan and cook, stirring often, until the onion softens, about 3–4 minutes.
  3. Separate the sausage meat from the casings, add to the pan, and break it apart with a spoon. Cook until browned and crumbly, about 5–7 minutes.
  4. Coarsely grate the mozzarella and finely grate the Parmesan.
  5. Stir in the gnocchi, the can of diced tomatoes with their juices, a splash of water, Italian seasoning, and a pinch of salt. Cover and simmer until the gnocchi is tender, about 3–5 minutes.
  6. Add the spinach to the pan and cook, stirring, until wilted and everything is well mixed, 1–2 minutes.
  7. Sprinkle the cheeses over the gnocchi and cover the pan; let sit off the heat until the cheese melts, about 3–5 minutes.
  8. Divide the gnocchi among bowls and serve.

  • Store leftovers in an airtight container in the fridge for up to 2 days; reheat gently with a splash of water or oil to loosen the sauce.
