Ingredients

  • 1 (5 oz) pkgbaby spinach
  • 4 fl ozchicken or vegetable broth
  • 1 clovegarlic
  • ¾ lblean ground beef
  • ¼ (8 oz) blockmozzarella cheese
  • ¾ lbnew potatoes
  • 1 mediumyellow onion
  • yellow onions

Directions

  1. Preheat the oven to 450°F.
  2. Parboil the potatoes in salted water until tender enough to fork, about 10 minutes; drain and set aside.
  3. Warm an ovenproof skillet over medium heat and melt a knob of butter to coat the bottom.
  4. Add the sliced onion and minced garlic; cook until just starting to soften, about 3–4 minutes.
  5. Add the beef and seasonings; cook, breaking the meat apart, until browned and crumbly, then remove the pan from heat.
  6. Crumble the mozzarella and set aside. Add the potatoes to the beef in the skillet; gently crush some with a fork and pour in the broth and Worcestershire; stir to mix.
  7. Sprinkle the mozzarella over the beef and potatoes; bake in the oven until the cheese is melted and lightly golden, about 7–8 minutes.
  8. Meanwhile, rinse and dry the spinach. In a separate medium pan, melt a bit more butter and wilt the spinach in batches, seasoning with salt and pepper as you go.
  9. When ready to serve, divide the beef-potato mixture and the spinach onto plates; adjust seasoning if needed and serve.

Two tips

  • Prep the spinach in advance and refrigerate for quick assembly. Leftovers reheat well in a skillet or the microwave.
