Directions
- Toast walnuts: Roughly chop the walnuts, then toast them in a dry nonstick skillet over medium-high heat, stirring until fragrant, about 2–3 minutes. Transfer to a plate to cool.
- Prepare bananas for the oats: Peel and cut the bananas into 1/4-inch rounds.
- Cook the oats: In a medium saucepan, add salt and water and bring to a boil. Stir in the oats, cinnamon, and half of the banana slices, then reduce heat to medium, cover, and simmer 3–5 minutes until the oats are reaching your desired texture and the bananas soften.
- Finish the oats: Uncover and continue cooking if needed until the mixture thickens to your liking.
- Caramelize the remaining bananas: Return the skillet to medium heat, add virgin coconut oil and maple syrup, then place the remaining banana slices in the pan flat-side down. Cook until golden, about 2–3 minutes per side, then flip and cook 1–2 minutes more.
- Combine and serve: Divide the oats between bowls, top with the toasted walnuts and the caramelized bananas, and drizzle with a little more maple syrup if desired.
- Serve: Enjoy the warm, comforting bowl right away; it comes together quickly and makes a satisfying weekday breakfast or light dinner.
