Directions
- Wash and dry all fresh produce; set aside.
- Preheat a grill pan or skillet over medium‑high heat.
- In a large bowl, mix the ground beef with Worcestershire, Dijon, garlic powder, salt, and black pepper until just combined.
- Shape the mixture into four patties.
- When the pan is hot, add virgin coconut oil and swirl to coat the bottom.
- Cook the patties until cooked through, about 3–5 minutes per side; transfer to a plate when done.
- Preheat a sauté pan over medium heat.
- Peel and dice the sweet potatoes into small pieces.
- Add coconut oil to the hot pan and swirl to coat the bottom.
- Add the potatoes to the pan; season with salt and pepper and cook, stirring occasionally, until tender and lightly browned, 6–8 minutes.
- Slice the tomato into rounds.
- To plate, arrange a bed of spinach on each plate, top with tomato rounds and burger patties, spread a little mayonnaise, then add the sweet potatoes on the side.
