  • 2pork sausages
  • 1 (16 oz) pkgpotato gnocchi
  • ½ mediumred onion
  • 1yellow bell pepper
  • yellow bell peppers
  • red onions

Directions

  1. Preheat the oven to 400°F and set a baking sheet nearby.
  2. Wash and dry the bell peppers, then seed and medium-dice them; transfer to a large bowl.
  3. Rinse the grape tomatoes and halve them; add to the bowl with the peppers.
  4. Peel and medium-dice the red onion, then add it to the bowl.
  5. Add the gnocchi, a drizzle of olive oil, brown sugar, dried sage, salt, and black pepper to the bowl; toss everything to coat.
  6. Spread the vegetables and gnocchi on the baking sheet in a single layer. Nestle the sausages among them.
  7. Roast in the oven until the sausages are cooked through and the gnocchi is golden brown, about 20–25 minutes.
  8. Remove the sheet from the oven and transfer the sausages to a cutting board; slice crosswise into 1-inch pieces.
  9. Divide the roasted gnocchi, peppers, onions, tomatoes, and sausage among plates or bowls and serve.

  • Prep the peppers and onion earlier in the day and store in the fridge for a quicker bake.
  • If you have a crusty loaf, serve slices on the side or crumble in a spoonful of tomato for added texture.
