Directions
- Set two pork chops on a broiler pan or baking dish and rub both sides with chili powder, salt, and pepper.
- Slide the pan under the broiler, about 6 inches from the heat, and cook until browned and cooked through, flipping halfway through, about 10–12 minutes.
- While the pork cooks, core two Gala apples and cut them into thin bite-sized pieces; place them in a large bowl.
- Wash, halve, core, and thinly slice the red cabbage; add the cabbage to the bowl with the apples.
- Heat a large skillet over medium-high heat and add a thin layer of virgin coconut oil to coat the bottom.
- Peel and thinly slice the red onion into half rings and add to the skillet; cook, stirring often, until softened, 3–4 minutes.
- Add the cabbage, apples, a splash of water, vinegar, salt, and pepper to the skillet; cook, stirring occasionally, until the cabbage is tender-crisp, about 6–8 minutes, then taste and adjust seasonings as needed and serve with the pork chops.”
