  • ½ (18 oz) bagbroccoli florets
  • ½ tbspcapers
  • ½ cupcashews, roasted unsalted
  • 1 clovegarlic
  • 1lemon
  • ⅛ cupnutritional yeast flakes
  • lemons

Directions

  1. Rinse the broccoli florets and pat them dry. Juice one lemon into the blender and set the other lemon aside for serving.
  2. Peel garlic and add it to the blender along with cashews, nutritional yeast, capers, soy sauce, Dijon mustard, salt, and pepper.
  3. Blend on high until everything smooths out; if the mixture is too thick, thin it with small amounts of liquid until you reach a dip-like consistency.
  4. Divide the broccoli florets between two plates and place the prepared dip on the side for dipping.
  5. Slice the second lemon into wedges to offer alongside for extra brightness.
  6. Taste the dip and adjust seasoning with a pinch more salt or pepper if needed.
  7. If not serving immediately, cover the dip and refrigerate; the broccoli can be kept at room temperature for a short time or chilled as desired.
