- 1 ½green bell peppers
- 1 (15 oz) canpinto beans
- ½ cupsalsa
- ½ cupshredded cheese, Mexican blend

Directions
- Preheat the broiler to high and place the oven rack in the upper third. Line a baking sheet with foil if you like easier cleanup.
- Wash and dry the peppers, cut them lengthwise into quarters, remove seeds and membranes, then slice each quarter crosswise into 3–4 chip-like pieces.
- Lay the pepper chips on the sheet with skins facing down in a single layer.
- Drain and rinse the beans, transfer to a small bowl, and stir in chili powder, oregano, and salt.
- Divide the seasoned beans over the pepper chips and top each with shredded cheese.
- Broil until the beans are heated through and the cheese melts, about 3–5 minutes. Remove from the oven.
- Serve the bites on plates and finish with a spoonful of salsa on top.
Two tips
- Prep ahead: chop peppers and store them in the fridge until ready to cook.
- Leftovers: refrigerate any remaining beans and cheese for quick reuse; you can sprinkle extra cheese on a new batch if desired.
