Directions
- 1. Preheat the oven to 425°F and lightly oil a baking sheet.
- 2. In a small saucepan over medium-high heat, combine the broth, tomato paste, and spices; simmer, whisking often, until slightly thickened, 2–3 minutes, then remove from heat.
- 3. Drain and rinse the black beans, then crush them in a bowl with a fork until mostly smooth but with some texture remaining.
- 4. Layer half of the tortillas on the sheet, spread with the bean mixture, then top with the remaining tortillas, pressing gently to seal.
- 5. Pour the sauce over the assembled tortillas and scatter the grated cheddar on top. Bake until the cheese is melted and bubbly, about 8–10 minutes.
- 6. While the pizza bakes, prepare the pico de gallo: small dice the tomatoes, peel and small dice the red onion, juice a lime over the mixture, season with salt, and stir in minced cilantro leaves.
- 7. Remove the pizzas from the oven and cut into quarters.
- 8. Serve the slices with pico de gallo and a spoonful of plain Greek yogurt.
