Beef Taco Stuffed Tomatoes with Cheddar, Lettuce & Greek Yogurt

Ingredients

  • ½ headbutter (Boston) lettuce
  • ¼ (8 oz) blockcheddar cheese
  • 2 clovesgarlic
  • ¾ lblean ground beef
  • ⅛ cupplain Greek yogurt
  • 4tomatoes
  • ½ mediumyellow onion
  • yellow onions

From the pantry: chili powder, cumin, ground, extra virgin olive oil, garlic powder, onion powder, salt

Directions

  1. 1. Peel and dice the onion, then peel and mince the garlic.
  2. 2. Warm a nonstick skillet over medium heat.
  3. 3. Add a drizzle of olive oil to the pan and swirl to coat the bottom, then cook the onion and garlic until softened, 2–3 minutes.
  4. 4. Stir in the ground beef along with chili powder and cumin, plus garlic and onion powders and salt; break up the meat as it cooks and cook until crumbly and fully browned, about 6–8 minutes.
  5. 5. While the beef finishes, rinse the tomatoes and pat dry. Slice from the top down to create wedges that don’t go all the way through, then sprinkle the cut sides with a little salt.
  6. 6. Coarsely grate the Cheddar and wash and dry the lettuce; stack and cut the leaves into thin strips resembling shreds.
  7. 7. When the beef is ready, fill each tomato with some of the meat, then top with Cheddar, lettuce, and a small spoonful of Greek yogurt.
  8. 8. Arrange the stuffed tomatoes on plates and serve immediately.

Two tips

  • Prep the onion and garlic ahead of time to speed up cooking on busy nights.
  • If you have leftovers, use the meat and toppings to top extra tomatoes or scoop onto a bed of lettuce for a quick mini salad.
