Ingredients

  • ½ cupbasmati rice
  • 2 crownsbroccoli
  • 1 clovegarlic
  • 1 (1 inch) pieceginger root
  • ½ mediumred onion
  • ¾ lbstriploin (New York strip) steak
  • red onions

From the pantry: black pepper, crushed red pepper, salt, soy sauce, toasted sesame oil, virgin coconut oil

Cookware

chef's knife · cutting board · garlic press (optional) · grater (optional) · measuring cups · measuring spoons · small saucepan · stainless steel skillet · stirring spoon · vegetable peeler

Directions

  1. Rinse the basmati rice under cold water, then drain and transfer to a small saucepan. Add water and bring to a boil over high heat.
  2. Wash the broccoli, cut it into florets, and break the stems into smaller pieces; set aside on a plate.
  3. When the liquid boils, stir once, cover, and reduce the heat to low. Cook until the liquid is absorbed, about 15 to 18 minutes, then remove from heat and let stand, still covered, for 5 minutes.
  4. Heat a skillet over medium-high heat and prepare the aromatics by peeling and slicing the onion, and mincing the garlic and ginger.
  5. Slice the steak against the grain into thin strips.
  6. Coat the bottom of the skillet with oil and brown the steak, about 2–3 minutes; transfer to a plate.
  7. In the same skillet, add a bit more oil and stir-fry the onion, garlic, ginger, and crushed red pepper until the onion softens, about 3–4 minutes.
  8. Toss in the broccoli and cook until bright green and just tender, 4–5 minutes, then return the steak to the pan along with soy sauce, sesame oil, and pepper; toss to coat.
  9. Uncover the rice and fluff with a fork, then serve the stir-fry over the rice and enjoy.

Two tips

  • Prep the broccoli and slice the onion while the rice cooks to streamline the workflow.
  • Leftovers can be kept in the fridge for up to 2 days; reheat gently or toss with a splash of water to loosen the rice.
