Directions
- Preheat the oven to 400°F and place the racks in the upper and lower thirds.
- Wash and dry all produce to prepare for cutting and mixing.
- Quarter the potatoes, spread them on a baking sheet, drizzle with oil, season with the listed spices, and toss to coat in an even layer.
- In a medium bowl, juice the lemon and whisk in minced garlic, oil, salt, and pepper to create the dressing.
- Pat the halibut dry, cut into portions if needed, season, wrap each piece with two slices of bacon, and drizzle with a touch more oil.
- Roast the fish on the upper rack until it is almost cooked through, about 12 minutes.
- Meanwhile, thinly slice the Brussels sprouts and add them to the dressing bowl along with grated Parmesan and almonds; toss to combine the salad and set aside.
- When the fish is near done, switch the oven to broil on high and continue cooking until the bacon is crisp and the halibut is cooked through, about 5 minutes.
