Bacon, Tomato & Mozzarella Breakfast Pizza

A quick breakfast that combines crispy bacon, melted mozzarella, and a center egg on warm flatbread. It comes together fast and holds up well on busy weeknights.

Ingredients

  • 2 slicesbacon
  • 2eggs
  • 2flatbreads or naan
  • ¼ (8 oz) blockmozzarella cheese
  • 1tomato
  • tomatoes

Directions

  1. Preheat the oven to 425°F and set a baking sheet ready.
  2. Warm a skillet over medium-high heat to start browning the bacon.
  3. Chop the bacon into bite-sized pieces and cook until crisp, about 3–4 minutes; transfer to a paper towel-lined plate to drain.
  4. Wash and slice the tomato.
  5. Grate the mozzarella cheese.
  6. Lay the flatbread on the baking sheet and distribute the tomato, cheese, and bacon over it, leaving space in the center for the egg.
  7. Carefully crack one egg into the center hole of each flatbread and place the sheet in the oven.
  8. Bake until the eggs are set to your liking, about 8 minutes.
  9. Remove from the oven, lightly season with salt and pepper, then slice and serve.

Two tips

  • Prepare the bacon ahead of time and store in the refrigerator for quick assembly.
  • If you prefer a different base, use naan in place of flatbread before topping and baking.
