Ingredients

  • ½English cucumber
  • ½ small bunchgreen onions (scallions)
  • 1lime
  • ½orange bell pepper
  • 1 heartromaine hearts
  • ½ (30 oz) whole chickenrotisserie chicken, white and dark meat
  • 6small flour tortillas
  • limes

  • orange bell peppers

Directions

  1. Wash and dry all fresh produce.
  2. Squeeze half of a lime into a medium bowl; reserve the other half for serving wedges.
  3. Thinly slice the green onions and add them to the lime juice. Stir in hoisin sauce and black pepper to make a dressing.
  4. Cut the cucumber in half lengthwise, then slice crosswise into thin half-moons and add to the dressing bowl.
  5. Trim and slice the bell pepper into thin strips and mix into the bowl.
  6. Shred the lettuce by slicing the romaine lengthwise and then across into thin strips; add to the bowl and toss together with the dressing.
  7. Remove meat from the rotisserie chicken and break it into small pieces; add to the bowl and toss to combine everything into a salad filling.
  8. Warm the flour tortillas if desired, then spoon the salad into each tortilla, sprinkle with sesame seeds, and serve with lime wedges and extra hoisin for dipping.

  • Make ahead: prep the dressing and chop vegetables up to a day in advance and chill in the fridge.
  • Serving idea: roll the salad in lettuce cups instead of tortillas for a low-carb option using the same ingredients.
