QUICK ANSWER

Gas mark 4 = 180°C (160°C fan, 350°F), the usual baking temperature. Gas 5 = 190°C (170°C fan, 375°F), gas 6 = 200°C (180°C fan, 400°F) and gas 7 = 220°C (200°C fan, 425°F). Above gas 1, each mark adds 25°F, roughly 10–15°C.

Conventional °C is the Fahrenheit setting converted and rounded to the nearest 10°C, the way recipes print it. UK recipes round gas 3 to either 160 or 170°C and gas 9 to 240 or 250°C. Fan is 20°C lower than conventional; see the fan oven chart.

What our recipes use.

446 of our recipes give an oven temperature in their directions. The most common are 450°F (gas 8, 192 recipes), 425°F (gas 7, 135 recipes), 400°F (gas 6, 70 recipes). Roasting vegetables and sheet pan dinners happens hot, at gas 7 or 8; 500°F has no gas mark, so use the highest setting your oven has. Browse the sheet pan dinners.
