From the pantry: olive oil, salt, pepper, chili powder

Sunday prep · 45 min

  1. Cook the pasta and the rice (about 3 cups cooked of each). Rinse the pasta cold.
  2. Season the chicken breast with salt, pepper and chili powder; bake at 425°F for 20 minutes, then slice. Half goes into the pesto pasta, half into the taco rice bowl.
  3. Make the dense bean salad: chickpeas, white beans, cucumber, red onion, feta, lemon and olive oil. It gets better by Wednesday.
  4. Roast the salmon on Wednesday night (12 minutes at 425°F) and glaze it with hot honey for Friday.
