Ingredients

  • 4 ozdeli turkey
  • 1/3 cuphummus
  • 1/2 cucumberEnglish cucumber, sliced into sticks
  • 1 pitapita bread, cut into wedges
  • 3/4 cupred seedless grapes

From the pantry: salt, black pepper

Cookware

cutting board · chef's knife · meal-prep container with compartments

Directions

  1. Lay out the deli turkey slices on a cutting board and roll each slice up tightly into a log.
  2. Slice the English cucumber into thin sticks about 3 inches (7.5 cm) long.
  3. Cut the pita bread into 6 wedges per pita.
  4. Rinse the grapes and pat dry with a towel.
  5. Spoon the hummus into the small compartment or a separate lidded cup so it doesn't get soggy.
  6. Arrange the turkey roll-ups, cucumber sticks, pita wedges and grapes in the remaining compartments of the meal-prep container around the hummus.
  7. Season the turkey roll-ups lightly with salt and pepper if desired, then seal the container and refrigerate.

Two tips

  • Swap the deli turkey for sliced rotisserie chicken breast if you want to use up the Sunday-baked chicken instead.
  • Pack the pita wedges in a separate small bag if you're prepping more than a day ahead so they stay crisp instead of steaming against the hummus.

Packing

Keep the hummus in its own small container or the sealed compartment of the box so the pita and cucumber don't get soft; everything is eaten cold, straight from the fridge, no reheating needed. Pack pita wedges separately if prepping more than a day in advance.

Storage

Keeps well in the fridge for up to 4 days in a sealed container. Not suitable for freezing since the cucumber, grapes and hummus don't hold up well after thawing.
