A no-cook, build-your-own lunch that turns deli tray leftovers into a satisfying stack of turkey, sharp cheddar and whole grain crackers. Crisp baby carrots and creamy hummus round out the box for crunch and staying power. It comes together in minutes and travels well for a midweek office lunch.

Ingredients

  • 3 ozdeli turkey slices (from snack tray)
  • 2 ozsliced cheddar cheese (from snack tray)
  • 10 crackerswhole grain crackers
  • 1 cupbaby carrots
  • 3 tbsphummus

From the pantry: black pepper

Cookware

cutting board · small knife · meal-prep container with compartments · small container for hummus

Directions

  1. Lay the deli turkey slices on a cutting board and fold or roll them into portions that fit the crackers.
  2. Cut the sliced cheddar into cracker-sized pieces if it is not already sliced small.
  3. Portion the whole grain crackers into one section of the meal-prep container.
  4. Stack the turkey and cheddar in a separate section of the container so diners can build their own stackers at lunchtime.
  5. Wash and add the baby carrots to a third section of the container.
  6. Spoon the hummus into a small lidded container and season with a pinch of black pepper.
  7. Snap the lid on the meal-prep container and tuck the hummus container inside or alongside it, then refrigerate until ready to eat.

Two tips

  • If using the Sunday-prepped tray, the turkey and cheddar are already portioned into piles, so this lunch is just an assembly job.
  • Swap the cheddar for pepper jack from the same tray if you want a spicier stack.

Packing

Keep the crackers in their own dry compartment so they stay crisp, and pack the hummus in a separate small container to prevent sogginess. Eat cold, straight from the fridge; no reheating needed.

Storage

Keeps well in the fridge for up to 3 days. Do not freeze, since the crackers, cheese and hummus all lose texture after thawing.
