Ingredients

  • 2 ozsalami, from deli snack tray
  • 1.5 ozpepper jack cheese, from deli snack tray
  • 3/4 cupred seedless grapes
  • 2 tbsproasted almonds

Cookware

cutting board · chef's knife · meal-prep container with compartments

Directions

  1. If starting from scratch, open the deli snack tray and pull out the salami and pepper jack cheese portions for one serving (skip this step if using the Sunday-prepped piles).
  2. Slice the pepper jack cheese into thick sticks or small cubes on a cutting board for easy snacking.
  3. Fold or roll the salami slices so they fit neatly into one compartment of the meal-prep container.
  4. Rinse the grapes if not already washed from Sunday prep and pat dry.
  5. Add the grapes to a second compartment of the container.
  6. Measure the roasted almonds into a small compartment or a snack bag to keep them from getting soggy.
  7. Arrange the salami and cheese in one section, grapes in another, and almonds in the last, then seal the container for the fridge or lunch bag.

Two tips

  • Swap the pepper jack for cheddar if you prefer a milder cheese, since the tray includes both.
  • Portion the almonds into small bags for the whole week on Sunday so this box takes under 5 minutes to pack each morning.

Packing

Keep the almonds in their own small container or bag so they stay crunchy and don't absorb moisture from the grapes. Pack the whole box cold with an ice pack; this lunch is meant to be eaten cold, no reheating needed, and is best eaten within 4 hours of packing for peak freshness.

Storage

Store assembled in the fridge for up to 3 days. The salami and cheese can be portioned up to 4 days ahead if kept tightly sealed; grapes and almonds do not freeze well, so avoid freezing this box.
