A grab-bag lunch that cleans out the fridge in the best way: salty salami and turkey, sharp pepper jack, a hard-boiled egg, crunchy crackers, and a handful of sweet grapes. It's the deli tray's last hurrah, no cooking required if you did the Sunday prep.

Ingredients

  • 1.5 ozsliced deli salami
  • 1.5 ozsliced deli turkey
  • 1 ozsliced pepper jack cheese
  • 1 egghard-boiled egg, peeled and halved
  • 10 crackerswhole grain crackers
  • 3/4 cupred seedless grapes

From the pantry: salt, black pepper

Cookware

cutting board · chef's knife · small pot · bowl for ice water · meal-prep container with compartments

Directions

  1. If you didn't hard-boil the eggs on Sunday, place eggs in a small pot, cover with cold water, bring to a boil, then remove from heat, cover, and let sit 10 minutes.
  2. Drain the eggs and transfer them to a bowl of ice water for 5 minutes, then peel.
  3. On a cutting board, fold or roll the salami slices and the turkey slices separately.
  4. Fold or stack the pepper jack cheese slices.
  5. Halve the peeled hard-boiled egg lengthwise.
  6. Rinse the grapes and pat dry.
  7. Arrange the meats, cheese, and egg halves in one or two compartments of the meal-prep container.
  8. Add the grapes to their own compartment so they don't get soggy.
  9. Pack the crackers in a separate compartment or small bag to keep them crisp, and season the egg with a pinch of salt and pepper right before eating.

Two tips

  • Swap the pepper jack for cheddar if you have leftover cheese from earlier in the week, since both come from the same snack tray.
  • Hard-boil all 4 eggs on Sunday along with the Wednesday salad eggs so Friday's box takes under 10 minutes to pack.

Packing

Keep the crackers in a separate compartment or bag from the meats and cheese so they stay crisp, and pack the grapes in their own section. Everything is meant to be eaten cold, straight from the fridge — no reheating needed.

Storage

Keeps well in the fridge for up to 4 days from prep. Do not freeze; the eggs, cheese, and grapes won't hold up well after thawing.
