Ingredients

  • 3 ozsliced deli turkey (from the snack tray)
  • 2 ozsliced cheddar cheese (from the snack tray)
  • 12 crackerswhole grain crackers
  • 1 cupred seedless grapes

Cookware

cutting board · chef's knife · meal-prep container with compartments

Directions

  1. Open the deli snack tray and separate out the turkey and cheddar slices for one serving (or use your Sunday-prepped piles if you already split the tray).
  2. Lay the turkey slices flat on a cutting board and stack or fold each one so it sits neatly in the container.
  3. Do the same with the cheddar slices, keeping turkey and cheese in their own section of the box.
  4. Rinse the grapes if you haven't already washed the whole batch on Sunday, then pat dry.
  5. Count out the crackers and add them to their own compartment so they stay crisp and don't get soggy from the meat or cheese.
  6. Fill the last compartment with the grapes.
  7. Seal the container and refrigerate until lunchtime; eat cold, building your own turkey-cheese-cracker stacks as you go.

Two tips

  • Swap pepper jack for cheddar and salami for turkey if you want to mix up the flavors from the same tray.
  • Keep crackers in a separate small bag or compartment even if you're packing the night before, since any contact with the meat or cheese will soften them by lunch.

Packing

Use a divided meal-prep container so the crackers stay in their own dry compartment, away from the turkey and cheese. Pack the grapes in the same box or a small side container. Eat cold; no reheating needed. Best eaten within 1 day of packing for maximum cracker crunch.

Storage

Keeps well in the fridge for up to 4 days if stored in a sealed container; the deli meat and cheese are the limiting factor, so check the tray's use-by date. Not recommended for freezing since the texture of crackers, cheese and grapes all suffer.
