  • ½English cucumber
  • ½ bunchradish
  • 2 heartsromaine hearts
  • ½ (30 oz) whole chickenrotisserie chicken, white and dark meat
  • 1shallot
  • 10 mlThai curry paste, red
  • 2 sliceswhole grain bread
  • shallots

Directions

  1. Preheat the oven to broil on high and position the rack near the top. Prepare a baking sheet for the croutons.
  2. Cube the whole grain bread, spread on the sheet, and drizzle with oil. Sprinkle with the listed spices and toss to coat, spreading evenly.
  3. Broil the bread until the edges are golden and toasted, about 3–4 minutes, stirring halfway through. Remove and let cool.
  4. In a medium bowl, whisk together the Caesar dressing with the red Thai curry paste until blended.
  5. Thinly slice the shallot and add it to the dressing mixture.
  6. Wash and dry the cucumber and radish; trim and cut the cucumber into crosswise slices and shave the radish into thin pieces. Add both to the dressing bowl.
  7. Tear or chop the romaine into bite-sized pieces and add to the bowl.
  8. Shred the chicken meat from the rotisserie bird and add it to the salad; toss everything to coat and combine flavors.
  9. To serve, divide the salad onto plates or bowls and sprinkle the croutons on top just before eating.

  • Tip 1: Croutons can be made ahead and kept in an airtight container for up to a day.
  • Tip 2: For a lighter option, skip the croutons and serve with an extra handful of cucumber and radish slices, or swap in a different green you have on hand.
