  • ½ (12 oz) pkgbroccoli slaw
  • 1 clovegarlic
  • 1 (1 inch) pieceginger root
  • ½lime

  • 2pork chops, boneless

Directions

  1. Whisk garlic with soy sauce, oil, and crushed red pepper in a medium bowl to make a light marinade.
  2. Slice the pork chops into 1/2-inch strips, add to the marinade, toss to coat, and set aside to mingle.
  3. Rinse and dry bok choy and mango; have them ready for the pan and dressing.
  4. Peel and mince the ginger on a separate surface and place in a small bowl.
  5. Juice the lime over the ginger, then whisk in peanut butter, fish sauce, water, honey, and spices to form the peanut sauce; set aside.
  6. In another bowl, whisk oil, soy sauce, vinegar, honey, and chili-garlic sauce to create a dressing; set aside.
  7. Heat a nonstick skillet over medium-high heat, then add oil and swirl to coat the bottom. Drain the pork from the marinade and stir-fry until browned and cooked through, about 4–5 minutes.

Two tips

  • Prep the bok choy, mango, and broccoli slaw ahead of time for a quicker finish during cooking.
  • Serve with cooked rice or another grain to stretch the leftovers and balance the heat.
