Directions

  1. Toss the sweet potatoes on a baking sheet with the asparagus and drizzle with oil, then season with salt and pepper. Spread into an even layer and bake at 425°F until fork-tender, about 15–20 minutes.

  3. Heat a skillet over medium-high heat and swirl in a little oil once hot.
  4. Cook the chicken until browned on each side, about 2 minutes per side, then move to a plate and loosely cover with foil.

  6. In the skillet, squeeze the lime, add ginger, half the cilantro, oil, chili-garlic sauce, honey, and coriander; stir to form a cohesive sauce.
  7. Return the chicken to the skillet with any juices, cover, and simmer until cooked through, about 8–10 minutes.
  8. Serve by dividing the roasted vegetables and chicken onto plates, then topping with the remaining cilantro for a fresh finish.
