  • ¾ lbBrussels sprouts
  • 1 smallbutternut squash
  • 1 lbchicken thighs, boneless skinless
  • ½ small pkgfresh thyme
  • 2 clovesgarlic

From the pantry: black pepper, extra virgin olive oil, pure maple syrup, salt

Directions

  1. Heat the oven to 450°F and line a sheet pan if you like for easy cleanup.
  2. Wash the Brussels sprouts and squash, then dry them well.
  3. Trim and halve the squash, scoop out seeds, and cut the flesh into medium chunks; spread them on the sheet pan.
  4. Add the trimmed Brussels sprouts to the sheet pan with the squash.
  5. Strip the thyme leaves from the stems and scatter them over the vegetables.
  6. Peel and mince the garlic; sprinkle it over the vegetables.
  7. Drizzle olive oil and maple syrup over the vegetables, then season with salt and pepper; toss to coat and spread in a single layer.
  8. Season the chicken thighs with salt and pepper, then nestle them among the vegetables on the sheet pan.
  9. Bake about 20 minutes, until the chicken is cooked through and the vegetables are tender.
  10. Divide the roasted chicken and vegetables onto plates and serve.

Two tips

  • Prep ahead by washing and trimming the Brussels sprouts and squash, and mincing the garlic the night before.
  • For leftovers, rewarm and add a tiny extra drizzle of maple syrup to freshen the glaze.
